Ingredients:
For the dough:
- 2 cups whole wheat flour
- 1 tablespoon oil
- Water, as needed
- A pinch of salt
For the filling:
- 1.5 cups jaggery or sugar
- A pinch of cardamom powder
- A pinch of nutmeg powder
- A pinch of saffron strands (optional)
- Ghee, for frying

Instructions:
1. Rinse the chana dal or toor dal in water until it runs clear. Soak the dal in water for about 2 hours.
2. Drain the water from the soaked dal and pressure cook it with enough water for about 3-4 whistles or until it becomes soft and cooked through.
3. Once cooked, drain any excess water and mash the dal using a potato masher or a blender until it becomes a smooth paste-like consistency.
4. In a separate pan, heat jaggery or sugar with a little water until it dissolves completely. Add mashed Lentils to the pan and mix well.
5. Cook the dal-jaggery mixture on medium heat until it thickens and starts to come together. Add cardamom powder, nutmeg powder, and saffron strands (if using) for additional flavor. Stir well to combine everything.

8. Divide the dough and filling into equal portions. Take a portion of the dough and make a small ball out of it. Place a portion of the filling in the center and fold the edges of the dough over the filling to cover it completely. Roll it into a thin circle with a rolling pin.
9. Heat a tawa or griddle and place the rolled puran poli on it. Cook it on medium heat until brown spots appear on one side, then flip it over and cook the other side as well. Apply ghee on both sides while cooking to enhance the flavor and texture.
10. Remove the cooked puran poli from the tawa and repeat the process with the remaining dough and filling.
11. Serve the Puran Poli warm with a dollop of ghee or enjoy it as it is.
