puliyogare recipe

 puliyogare , also known as   tamarind rice, is a popular South Indian dish. It is a tangy and flavorful rice dish that is often served as a main course or as part of a festive meal. The dish gets its unique taste from the combination of spices, tamarind, and the tempering of mustard seeds, curry leaves, and dried red chilies.

Ingredients:

- 2 cups of cooked rice

- 1 lemon-sized ball of tamarind

- 2 tablespoons of oil

- 1 teaspoon of mustard seeds

- 1 teaspoon of Bengal gram (chana dal)

- 1 teaspoon of split black gram 

- 2 dried red chilies

- 8-10 curry leaves

- 1/4 teaspoon of asafoetida (hing)

- 1/4 teaspoon of turmeric powder

- 2 teaspoons of powdered jaggery (optional)

- Salt to taste

For spice powder:

- 2 tablespoons of coriander seeds

- 1 tablespoon of Bengal gram 

- 1 tablespoon of split black gram 

- 1 tablespoon of sesame seeds

- 4-6 dried red chilies (adjust according to spice preference)

- 1/4 teaspoon of fenugreek seeds

- 1/4 teaspoon of asafoetida (hing)

- 1/4 teaspoon of peppercorns


Instructions:


1. Soak the tamarind in warm water for 15-20 minutes. Extract the pulp and discard the seeds. Set aside.


2. Dry roast all the ingredients for the spice powder in a pan until they turn golden brown and emit a fragrance. Let it cool and grind it to make a fine powder.


3.Take a pan and heat it with oil, then fry it.Once they splutter, add the Bengal gram, split black gram, dried red chilies, curry leaves, and asafoetida. Fry the lentils till golden.


4. Add the tamarind pulp, turmeric powder, jaggery (if using), and salt. Cook on low heat until the mixture thickens slightly and the raw smell of tamarind disappears.


5. Add the prepared spice powder to the pan and mix well.


6. Finally, add the cooked rice to the pan and mix gently until all the rice grains are coated evenly with the tamarindmixture.


7. Adjust the seasoning according to taste and cook for a few more minutes until the flavors are well incorporated.


8. Remove from heat and serve hot with papad or any vegetable side dish.


puliyogare can be enjoyed on its own or served with raita, pickle, or yogurt. It is perfect for lunch boxes, picnics, or as a quick and easy meal option. The tangy and spicy flavors of puliyogare make it a favorite among rice lovers and a must-try dish for anyone who wants to experience the authentic taste of South Indian cuisine.
