Here's a traditional indian omelette recipe:


Ingredients:

- 2 eggs

- 1 small onion, finely chopped

- 1 small tomato, finely chopped

- 1-2 green chilies, finely chopped (adjust according to spice preference)

- 2 tablespoons coriander leaves, finely chopped

- Salt to taste

- ¼ teaspoon turmeric powder

- ½ teaspoon red chili powder (optional)

- 2 tablespoons oil

Instructions:

1. In a mixing bowl, crack open the eggs and beat them well.

2. Add the chopped onion, tomato, green chilies, coriander leaves, salt, turmeric powder, and red chili powder (if using) to the beaten eggs. Mix everything together until well combined.

3. Heat the oil in a non-stick pan over medium heat.

4. Pour the egg mixture into the pan and spread it evenly.

5. Cook the omelette for about 3-4 minutes until the bottom side is golden brown.

6. Flip the omelette carefully using a spatula and cook the other side for another 2-3 minutes until it is cooked through.

7. Once cooked, transfer the omelette to a serving plate.

8. Serve hot with some bread, roti, or rice, or enjoy it on its own as a breakfast or snack.

Optional additions: You can add any of your favorite ingredients to customize your Indian omelette, such as cheese, bell peppers, mushrooms, spinach, or leftover cooked meats.

Note: Adjust the spiciness of the omelette according to your preference. You can increase or decrease the amount of green chilies and red chili powder accordingly.
