Ingredients:
- Leftover idlis (preferably 1-2 days old)
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (split black lentils)
- 1 teaspoon chana dal (split Bengal gram)
- 1 small onion, finely chopped
- 1 small green chili, finely chopped
- Few curry leaves
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon finely chopped coriander leaves (optional)

Instructions:
1. Slice the leftover idlis into small bite-sized pieces. Set them aside.
2. Heat oil in a frying pan or kadai on medium heat. Once the oil is hot, add the mustard seeds, urad dal, and chana dal. Fry them until the mustard seeds start to splutter and the dals turn golden brown.
3. Add the chopped onion, green chili, and curry leaves to the pan. Saute them until the onions become translucent and slightly caramelized.
4. Now, add turmeric powder and salt to the pan. Mix everything well.
5. Add the sliced idlis to the pan and gently toss them with the onion mixture, making sure each idli piece is coated evenly.
6. Fry the coated idlis on medium to high heat until they turn golden brown and crispy. You can flip them occasionally to ensure even browning.
7. Once the idlis are fried to perfection, remove them from the pan and place them on a paper towel to absorb any excess oil.
8. Garnish with freshly chopped coriander leaves (optional) for added freshness and flavor.
9. Serve the fried idlis hot as a snack or as a side dish with chutney or tomato ketchup.
Tips:
- For best results, use leftover idlis that have been refrigerated for a day or two. Fresh idlis may become too soft and may not hold their shape during frying.
- If you don't have leftover idlis, you can also make fresh idlis specifically for frying. Prepare the idli batter as usual and steam the idlis. Allow them to cool completely before slicing and frying.
- You can customize the seasoning as per your preference. Add a pinch of red chili powder or garam masala for a spicier flavor.
- If you prefer a healthier option, you can shallow fry the idlis instead of deep frying. Heat a few tablespoons of oil in a non-stick pan and fry the idli slices on both sides until crispy.
